It's that time of year again, the days are short, the gloves and scarves come out, the trees are bare and you find yourself wanting to relax and indulge in some warm exciting flavours.
A menu has been created, packed full of local, seasonal produce. At this time of year the markets are full of game and root vegetables. The dishes contain ingredients that are not commonly found in your local supermarkets like salsify, Jerusalem artichokes and purple carrots.
A selection of slow cooked, rich braising meats such as twenty four hour belly of pork, and confit lamb shoulder are plated alongside prime cuts of venison and duck....A menu of pure indulgence on a winter's day.
